Adding a tag to variables in script that creates config file

What is the easiest way to add a tag? For example, in my script that creates a config file, I have the line
echo "Variable = $arr[0]" >> $CFG_FILE
So, this takes the respective entry from another script and assigns it to Variable. What if I don't want it to necessarily be in order, but instead a user could say,
--Variable 273893
in the calling script that would then assign that value to "Variable".
I'm not too familiar with coding, so explicit help would be much appreciated. Thanks!
