How pipe/redirect influences the execution of the script which output is to be piped/redirected?

I stumbled on the example of something I wasn't aware to be possible, that the mere fact of putting |
or >
after the script, can influence of how it will run. Details of how I realized it can be read here: https://stackoverflow.com/questions/53027036/why-piping-output-of-docker-compose-exec-to-grep-breaks-it - there is a docker
related question, and here I would like to ask the more general one - how is this even possible on Linux? What pipe/redirection at the end of the script changes in the environment in which the script runs?
