How to get back over overwritten data?

My case: photos and videos from iPhone?

My phone updated and restored and I never got to back up my phone.

Where does the overwritten data go and how do I get it back?

How to get back over overwritten data?

Generally, on magnetic HDDs it might be possible to recover even overwritten data.

However, this is not the case, I highly doubt you could recover any overwritten data from memory card or internal memory (it's the same technology).

Where does the overwritten data go?

The data get simply overwritten, thus they vanish.

As you can see, iPhones do not use a memory card. Apple uses BGA chip to do all memory functions.

Even if you could somehow carve it out, do not think you could just plug it to a computer.
