When testing out the new Ubuntu Bionic Beaver installer, I chose the option to install Ubuntu and enable LUKS encryption + LVM.
I was waiting for the confirmation page to ensure that the installer was installing to the correct disk. It turns out I'd chosen the wrong disk (my main disk) and I figured that I'd simply be able to rollback the installer at the confirmation screen.
The horrific violation of my expectations was that the installer encrypted my main disk and setup LVM BEFORE i confirmed the installation. Now I'm stuck with my main disk being encrypted and unmountable. I'm trying desperately to recover my main disk which I cannot boot from, can decrypt but cannot mount.

If the method is similar to debian, when you chose a partition as encrypted partition and proceeded, either most of its content was left intact (but a few megabytes at the start) or all of it was overwritten (if you chose to blank the data). Either case, there was no step were the former data was encrypted.
